Your beverage menu change regularly, what are you paying attention to when you compose them?

We pay attention to the trends, the seasonality, the origin of the products and we make it match with the culinary identity of the 3 restaurants and bar.

How do you select your suppliers?

When we choose our suppliers, we are looking for partners with ethics that are close to our values, who have an active environmental approach and offer quality products with a strong identity.

We collaborate with both measured production and large-scale suppliers, and we focus on quality products that meet our customers’ desires.

3 favorite products:

Chardonnay – Domaine des Balisiers – Peney, GE
We played on the association of the largest estate in organic and biodynamic culture with the largest hotel in Switzerland. Our common point ? Quality requirements and expertise.

Nectar and fruit juice – Opaline – Orsières, VS
A company from Valais who select the best fruits and vegetables of the season, and create an ethical and sustainable product. Our common point ? Opaline as Starling Hotel Geneva focus on societal and environmental values.

Beers – La Pièce – Meyrin, GE
This meyrinoise micro brewery offers a range of beers based on local ingredients. The “Moby Kid” and “Vermeilleuse” beers brewed with 100% Geneva malt are labeled GRTA (Geneva Région Terre et Avenir).
