The 2019 honey harvest has kept its promises!

At the end of July, our now traditional honey harvest took place. Given the particularly dry weather conditions of recent weeks, the 2019 vintage is extremely rich and concentrated, which augurs well for excellent storage conditions. With a beautiful caramel colour, it concentrates a rich and varied pallet of flavours and will perfectly flavour ice creams, desserts and gingerbread.

To awaken your taste buds and introduce you to the secrets of our pastry chefs, we offer you the Starling gingerbread recipe, ideal as an accompaniment to foie gras or simply enjoyed at tea time:


Ingredients :

  • 175gr of milk
  • 10gr spices for gingerbread
  • 50gr of sugar
  • 250gr honey
  • 75gr whole eggs
  • 175gr of flour
  • 75gr rye flour
  • 20gr baking powder
  • 2gr salt
  1. In a bowl, mix the milk, heat and infuse with the spices (gingerbread).
  2. Add the sugar, honey and then the whole eggs.
  3. Stir in flour, rye flour, spiced powder and salt. Mix until a soft and elastic paste is obtained.
  4. Pour the mixture into a previously gilded mould.
  5. Bake the appliance in the oven for 40 minutes at 150°.
  6. Let it cool to room temperature and enjoy!
